Bols is the blue that most bars actually pour, and underneath the colour it is a real product: a distillate of bitter orange peel from a house that has been making liqueurs since 1575. The dye is Brilliant Blue FCF, E133, a synthetic colour that Bols names outright rather than burying under “colour added”. Naming it is more disclosure than most of this shelf offers.
The chemistry problem is not the dye, it is the 21%. A liqueur is sugar and alcohol in a ratio, and the weaker the bottling the more sugar comes attached to the same drink. Against Pierre Ferrand at 40%, matching the alcohol here means pouring roughly twice as much liquid and taking roughly twice the sugar with it. That single ratio is most of what separates the bottles in this category, and it is why the ones that sound lighter usually are not.
