Stout's ancestor. Chocolate and brown malts contribute melanoidins and Maillard byproducts like roasted barley does in stout, usually at slightly higher ABV than a dry stout. Baltic porters are lager-fermented but 7-9% ABV, trading amines for alcohol.

Congeners Moderate ▾
Byproducts of fermentation (methanol, acetaldehyde, fusel alcohols). Strongly linked to hangover severity; darker, less-distilled spirits carry more.

Produced by bacteria during fermentation/aging. Trigger flushing, headaches, congestion in sensitive drinkers. High in red wine, beer, aged spirits.
Polyphenols Moderate ▾

Porter lives in stout territory: dark malt chemistry, ale amines, mid-range ABV. The Baltic variant swaps ale yeast for lager yeast but nearly doubles the alcohol.
