Made by arrested fermentation or by removing alcohol after brewing (vacuum distillation, reverse osmosis). Ethanol under 0.5% means no meaningful hangover mechanism. Residual maltose runs higher than regular beer, and some brands add natural flavors to replace what dealcoholization strips out. Fermented product, so trace amines persist for the extremely histamine-sensitive.
